So here is the recipe:
1 | package (9 ounces) refrigerated cheese-filled tortellini( I used Frozen Pay close attention to the size my pkg was 20 ozs I used half) |
1 | tablespoon olive or vegetable oil ( olive here) |
1 | medium bell pepper, cut into 1-inch pieces (1 cup) ( I used 2 1 red and 1 green) |
2 | cups chopped roma (plum) tomatoes (6 to 8 medium)( I only did 3) |
1 | medium zucchini, cut lengthwise in half, then cut crosswise into slices (1 1/2 cups) |
1/2 | teaspoon Italian seasoning |
1/2 | teaspoon garlic salt( I used three cloves of fresh garlic) I also added a whole yellow onion in about 1 inch pieces |
- Cook and drain tortellini as directed on package, using 3-quart saucepan. Wipe out saucepan with paper towel; wipe dry with paper towel.
- Heat oil in same saucepan over medium-high heat. Cook bell pepper in oil 2 to 3 minutes, stirring frequently, until crisp-tender.( added the onion in here)
- Stir in tomatoes, zucchini, Italian seasoning and garlic salt. Cover and cook 3 to 5 minutes, stirring occasionally, until zucchini is tender.( I put the zuchinni in before the tomatoes by about a min)
- Stir in tortellini. Cook 2 to 3 minutes, stirring occasionally, until hot

Look-gorgeous and bright
Difficulty-Easy good for a beginner cook easy to read and follow. I would prep you veg. beforehand this cuts down on time
Opinion-I thought this recipe was amazing the flavors melded very well. It tasted like a fresh tomato sauce and the vegetables and seasoning added a ton of depth. I think this would be even better if you had a ton of garden fresh vegetables (farmers markets are coming soon). My kids and Husband all loved it! This recipe was easy and will definitely be a regular in our household
